Just like the history of the state, European and Asian meets Hawaiian in the food that's served at Roy's Hawaiian Fusion. The chain of 30 restaurants is named after founder Roy Yamaguchi, whose genius had landed the original Roy's on a number of award lists and being lauded by Food and Wine magazine as the “crown jewel of Honolulu's East-West eateries”.
Each Roy's features a unique menu, but are invariably prepared by chefs who have trained under the founder, and inspired by Hawaii's abundance of seafood. Ono (wahoo), opakapaka (pink snapper) and onaga (red snapper) and lobsters, freshly imported from Hawaii, are transmuted at Roy's into wonderful menu items such as Thai poached split lobster with coconut scented rice, prosciutto-wrapped shrimp, blackened ahi and mahi-mahi tacos.
