Long before your favorite restaurant even considered putting fish tacos on their menu, Rubio's had already done so. As the 1970s were drawing to an end, founder Ralph Rubio had his first taste of fish taco at a seaside Mexican taqueira. Such was his love of fish tacos that he went on to found the eponymous chain in 1983.
